Ellie only







For the first time in Molly's life, she has boycotted the camera. As everyone knows she is a ham in front of the camera! Last night the only pictures I got were only of Ellie Grace. She has no choice at this point. But she does choose not to smile. The flash gets her everytime. Or last night it could have been because Joe and Molly were laughing so hard at her. They put Molly's sunglasses on her. If anyone can get Ellie to smile it is Molly!
We are all ready for the weekend. This week has been busy, so it will be nice to hang out at home and relax! Our church does a chicken noodle dinner for a fundraiser, so we were helping with that Sunday and Monday. I found a new pie recipe that I took to that. Joe has claimed it as his favorite pie now. I will list the recipe for you all to try! It is called Carmel Pecan Cheesecake Pie.
Ingredients:
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
4 eggs
1 teaspoon vanilla extract
1 unbaked pastry shell (9 inches)
1-1/4 cups chopped pecans
1 cup caramel ice cream topping
Directions: In a small bowl, beat the cream cheese, sugar, 1 egg and vanilla until smooth. Spread into pastry shell; sprinkle with pecans. In a small bowl, whisk remaining eggs; gradually whisk in caramel topping until blended. Pour slowly over pecans. Bake at 375° for 35-40 minutes or until lightly browned (loosely cover with foil after 20 minutes if pie browns too quickly). Cool on a wire rack for 1 hour. Refrigerate for 4 hours or overnight before slicing. Refrigerate leftovers. Yield: 6-8 servings.
